Shish Kabobs on the Campfire

Shish Kabobs Cooked over The Fire]I was heading up the canyon last week to do some cooking, including a Dutch Oven Strawberry Rhubarb pie for the Outdoor Cooking Magic Challenge and was trying to figure out what to cook over a campfire.  We have some beautiful spots just minutes away from where I live and it's fun to get up in the canyon and do some cooking in a different setting.

I finally decided on kabobs, but didn't want to take the time to hold them over the campfire and try and cook them, so decided to make the Shish Kabobs just like normal but do it in a vegetable basket propped between two logs over the coals.  Yeah, I know they technically aren't shish kabobs, but it's everything but having them on the skewer.

I cooked the meat first and then added the veggies.  I wanted to make sure that the meat got done--probably could have added the vegetables sooner as the meat got quite done.  And I wished I had let everything marinate longer than I had--I would go at least three hours, which is what I normally do.  But I had run out of time.

There are a lot of things you can do with a vegetable basket over the campfire and get that great smoky taste with your food.  Shish Kabobs off of the skewer are one of them.
