We often forget what delicious side dishes can be prepared on the grill. Veggies are wonderful when cooked on the grill, and the recipe for today was sooooo good. The dish that I cooked was Red Potatoes On The Grill. It's a perfect side dish to go along with whatever main dish you are cooking. Great flavor and easy to make--can't get much better than that.
Here's the recipe:
- 6 small red potatoes, cut into quarters
- 1 onion, thinly sliced
- 6 whole garlic cloves, peeled
- 2 tsp dried rosemary, crushed (or you can use 2 sprigs of fresh rosemary)
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp grated Parmesan Cheese
- 1/4 cup olive oil
- Put the potatoes, garlic, and onions on a couple of pieces of aluminum foil.
- Sprinkle with the rosemary, salt and pepper, and Parmesan cheese.
- Drizzle the olive oil all over.
- Bring opposite two sides of the foil together above the dish and fold together.
- Roll up each of the remaining edges and seal tightly.
- Grill in a covered grill for 40 minutes total (check to see if potatoes are done by inserting fork through the foil and into the potatoes. The fork should go in easily if they are done).
- It's best if you can put the foil packet above burners that are not turned on, and turn the remaining burners to high, so that the packet gets indirect heat.
- You'll want to turn the packet over half way through the 40 minutes.
- Carefully open so you don't burn yourself on the steam, serve, and enjoy!
