Grilled Peaches and BerriesIt's been a little while since I grilled a dessert, so I decided to try one that I had seen recently: Grilled Peaches and Berries.  If I could rename this recipe, it would be renamed "Yummy".  Everyone once in a while, you make something that kind of makes you sit up and take notice.  This was that dish.  I love cooking different types of things on the grill, so making this dessert was lots of fun.  I KNOW you'll enjoy it if you try it.

You can get this dish ready to go, and when you pull your main dish off the grill, toss these one, and you'll have a delicious dessert in 15-20 minutes.

Delicious dessert on the grill, cooked in foil
Ingredients
  • 3 medium ripe peaches, cut in half and pitted
  • 1 cup fresh blueberries
  • 2 tbsp brown sugar
  • 2 tbsp butter
  • 1 tbsp lemon juice
Instructions
  1. Put the two halves from each peach, cut side up on a double thickness of aluminum foil.
  2. Sprinkle each set of peaches with 1/3 of the blueberries, brown sugar, butter, and lemon juice.
  3. Fold the foil up around the peaches and seal tightly.
  4. Grill on a covered grill on medium low heat for 18-20 minutes. I turned on one side of the grill and left the other side off, and put the peaches over the cool side.
  5. Open carefully (allowing steam to escape) and check to see if the peaches are tender.
  6. Put peaches and blueberries on a plate and pour the juice over the peaches. It will thicken if you cool it just a bit.
  7. I didn't do this, but adding a scoop of ice cream to this would be delicious as well.
