Ingredients
4 potatoes, cut into 1 inch pieces 1 lb ground beef 1 medium onion, diced 1 can of corn 1 can of peas 1 can of stewed tomatoes 1 can of green beans 1 can of baked beans 1 can of tomato soup Bay leafPrepare your briquets and Dutch oven. Put about 15-20 briquets underneath the Dutch oven.
Add ground beef to Dutch oven and brown.
Add onions to ground beef and cook.
Now add the diced potatoes.
Add all other ingredients (don't drain the cans). Add the bay leaf and any other desired seasonings, such as salt and pepper.
Mix everything together.
Cook until the potatoes are done.

Tried your recipe for “Cowboy Soup” last night for my Cub Scout group. I have recently gotten my first dutch oven and was looking for a simple recipe to try. It was easy to prepare, lots of fun, and everyone loved it!

Good question and I don’t remember exactly, but it seems like it we fed 6-8 with it. Of course, it depends on how many times they come back for seconds 🙂
What is the approximate time to cook? And do you place any briquets on top?
Wendy, after you get everything in, it usually takes about 30 minutes. I usually just check the potatoes and when they are done, the whole thing is done. You can put some briquettes on top, but it’s not necessary. Since this has a fair amount of liquid in it, the dish can take more briquettes from the bottom.

I make this all the time in a stock piton my stove. It’s so good! If I want it more soupy I just leave out the potatoes and baked beans. It’s so good even when I don’t have all the ingredients. Freezes well too and feeds my husband and I three times! I make it once a month in the fall and winter. It’s the best!

Thanks, Lana. I agree. I love doing this dish when I teaching someone to cook with a Dutch oven. It’s delicious and pretty fool proof for a beginner.
I added bacon to the to the cowboy stew turned out awsome.
I cooked up bacon and put in mine and added a little of the bacon grease.
I use mild sausage instead hamburger and tastes more flavor
Made this at Cubscout camp last fall, had sour cream & salsa available for topping. Was absolutely perfect. Was a huge hit and requested for all upcoming trips. Crackers were big hit for dipping. Loved this recipe
